Creating Savory Dishes With Local Bourbon on Long Island’s East End.

Like many of you out there we’re big fans of liquor. Especially a warm, sweet glass of bourbon as the fall chill starts to hit the air. Out on the North Fork Long Island Spirits’ Rough Rider Straight Bourbon Whiskey is the spirit of choice. Even more comforting than a straight glass by the outdoor fire is using bourbon to cook up some flavorful local comfort food.

Bistro 72 prides itself on using local food and ingredients throughout its diverse gastro pub menu. Each season, Executive Chef James Junk uses a favorite local wine or spirit in his savory culinary creations. So of course we get excited. How excited? Happy Hour on a Friday excited! This season, it’s all about bourbon.

In 1964, Congress named Bourbon “America’s Native Spirit”. In fact, only whiskey produced in the United States can be considered Bourbon. God Bless America. Long Island Spirits’ Rough Rider Straight Bourbon Whiskey, made on Long Island, is this fall’s local spirit of choice. Bourbon adds a sweet kick to our Bourbon Chicken Wings and Short Rib Tacos and creates a sweet and smoky taste to the Whiskey Infused Batter of the crispy onion rings which features a Barbecue Aioli Dipping Sauce. You’re only decision, will be which one to try. We say, try them all.

Rough Rider Whiskey Infused Batter, Barbecue Aioli Dipping Sauce and Long Island Spirits, Baiting Hollow

Rough Rider Straight Bourbon Whiskey is aged Bourbon with a mash bill of 60% corn, 35% rye, and 5% barley aged in a new charred American oak barrels. The bourbon goes through a maturation process that results in a recipe with a hint of fresh juice, blackberry and currant, along with caramel and burnt sugar. It’s this flavor that is infused into the onion ring batter, the chicken wings and the Worcestershire Aioli that accompanies the short rib tacos.
